Quinoa & Brown Rice Stir Fry with Eggs, Tamari and Green Veg

A perfect balance of protein, fibre and essential micronutrients. You can put this together in 7 minutes and it keeps you going through the afternoon without the energy crash.

Why This Works Nutritionally

Quinoa is one of the few plant foods that is a complete protein, containing all nine essential amino acids. Combined with eggs, you get a serious protein hit that stabilises blood sugar and supports hormone production. Green vegetables add fibre, folate and magnesium. Ginger and garlic are both anti-inflammatory and support liver detoxification, important for healthy oestrogen clearance.

Ingredients (serves 1)

Method

  1. Boil two eggs for 5 to 6 minutes. Set aside.
  2. Heat olive oil in a pan. Add the quinoa and brown rice and stir for 2 minutes.
  3. Add a few drops of tamari. Add green vegetables straight from frozen.
  4. Fry for 4 to 5 minutes until the veg is tender.
  5. Add minced garlic and ginger. Stir through for 1 minute. Add more tamari to taste.
  6. Slice the eggs and place on top. Finish with fresh parsley and sesame seeds.
