Why This Works Nutritionally
Quinoa is one of the few plant foods that is a complete protein, containing all nine essential amino acids. Combined with eggs, you get a serious protein hit that stabilises blood sugar and supports hormone production. Green vegetables add fibre, folate and magnesium. Ginger and garlic are both anti-inflammatory and support liver detoxification, important for healthy oestrogen clearance.
Ingredients (serves 1)
- 1 pre-cooked packet of quinoa and brown rice (250g)
- 2 eggs
- Handful of green veg: peas, courgette, cabbage, spring onion
- 1 thumb of fresh ginger, minced
- 2 garlic cloves, minced
- 2 to 3 tbsp tamari sauce
- 1 tbsp extra virgin olive oil
- Fresh parsley to serve
Method
- Boil two eggs for 5 to 6 minutes. Set aside.
- Heat olive oil in a pan. Add the quinoa and brown rice and stir for 2 minutes.
- Add a few drops of tamari. Add green vegetables straight from frozen.
- Fry for 4 to 5 minutes until the veg is tender.
- Add minced garlic and ginger. Stir through for 1 minute. Add more tamari to taste.
- Slice the eggs and place on top. Finish with fresh parsley and sesame seeds.
